First half of September
The selected gra pes are immediately pressed. After the soft pressing, it follows the static decantation for 36 hours and then the alcoholic fermentation at controlled temperature
(l 3°C) for about 12 days. The wine rests in stainless steel
tanks, in contact with the fermentation yeasts for about two months, before being racked and bottled; it follows a short refinement in the bottle

Tasting notes
The color is straw yellow with reflections tending to golden. The aromas are a complex integrations of sweet herbs (sage, mint), citrus (bergamot) with hints of white fruit (peach, apple) and slight mineral notes. On the palate it is complex and textural with balanced acidity and a long finish
