Beginning of October
Soft crushing is followed by cold maceration for about l8 hours at l0°C. After the soft pressing,the must fermented at a controlled temperature (18 °C) . The wine is racked and then bottled; it fol lows a short refinement in the bottle
Tasting notes
The color is bright cherry pink. The nose has aromas of fresh red fruit (raspberry, wild strawberry) and floral notes of rose and carnation, in a subtly spicy background. On the palate it is fresh, sapid, delicately tannic vinous, with a fruity note closure and a slight almond aftertaste

Ideal with fish soups,grilled fish . Perfect for aperitif
